As dozens of the nation's top billfishing teams took to Port O’Connor, Texas, for the 2023 Lone Star Shootout, the Cotton Culinary team packed our mobile kitchens and made the trip to cook fresh meals for the participants.

With a history of serving as the official caterer for the annual sportfishing tournament hosted by the Houston Big Game Fishing Club, Cotton Culinary was proud to continue the tradition for 2023. It’s a big responsibility to be the sole source of fuel for the hungry fishermen, but it’s a task we were well-equipped to handle.

While most Texans were just starting to dust off their boots and get ready for the Houston Rodeo’s World’s Championship Bar-B-Que Contest, the Cotton Culinary team was already hard at work for the Rodeo Uncorked! Roundup and Best Bites Competition, an event that pairs over 100 signature dishes from local restaurants with more than 250 award-winning international wines.

Easy Mousse Cup Recipe for Mother’s Day

Mother’s Day is right around the corner and we’ve got a great idea for the DIY gifters! Surprise the special woman in your life with a fluffy mousse dessert that’s sure to make her smile. Follow the instructions below and try to resist eating it all yourself!

WHAT YOU’LL NEED

  • 12 oz hard cream cheese - do not take out of the fridge until ready to use to avoid softening
  • 10 oz non-dairy whipping cream
  • 1/2 cup sugar
  • 4 eggs, only the yolks
  • 3 Tbsp milk
  • 2/3 cup confectioners' sugar
  • 18 graham crackers
  • 1/4 cup margarine
  • About 7 oz grated white chocolate
  • Your topping of choice, such as nuts, granola, sprinkles, chocolate chips or fruit

Ingredients:

  • 1 7-to-8-pound bone-in ham
  • Whole cloves
  • 1½ teaspoons dry mustard powder
  • 1 cup brown sugar
  • ¼ cup dry sherry

The annual bicycle ride from Houston to Austin raises money for the National Multiple Sclerosis Foundation, which assists those with the disease by way of research and initiatives to help improve their lives.   • Wash your hands or use gloves: After handling raw meat or eggs, wash your hands with soap and water for 30 seconds to prevent cross-contamination or use gloves when handling raw foods.
  • Check your temp: Keep a chart like this one handy in your kitchen. Use a food thermometer to check the appropriate place for meat and the proper temperature.
  • Two-hour limit: Food that has been left out at room temperature for two hours should be considered no longer safe to consume and should be thrown away.
  • Reheat the right way: Leftovers should be reheated to at least 165°F before serving, this applies to food reheated in a microwave as well.

Turkey Preparation Tips - Holiday Catering

Expert Tips for the Perfect Turkey

You might cook turkey once a year, which makes it pretty difficult to become an expert! Cotton Culinary’s Wade Schindler cooks a few more than you do, so we asked him for some tips on roasting the perfect turkey this Thanksgiving.

1. Thaw it out: If you’re buying a frozen bird (and there’s really not that much difference in taste between frozen and fresh), allow 24 hours of thawing at 40 degrees for every 4-5 pounds of meat.

2. Brine it: Let’s face it, turkey is a pretty dry meat. Brining may sound daunting, but if you want the best-tasting, juiciest turkey on the block, you’re going to need to add some salt and whatever spices sound good to you.

3. Stuff it with aromatics: Don’t risk food poisoning your family by cooking the stuffing inside the turkey. You can add flavor to a turkey and the gravy by putting some aromatics in it. Onions, carrots, celery and some herbs are great, just throw them out when the turkey is done.

Culinary Makes a Splash at #POCO18

Cotton Culinary was proud to be the official catering sponsor of the 2018 POCO Bueno Fishing Tournament in July, hosted annually by the Port O’Connor Offshore Association on Texas’ Gulf Coast. The culinary team provided more than 4,000 meals over the course of four days to all of the inshore and offshore anglers, tournament staff, vendors, attendees, and volunteers.

The Menu

Our team of culinary experts planned a specialized menu to meet our client's needs. First, fifteen hundred pounds of fresh Louisiana crawfish were brought to the event in Denver, Colorado. Once there, our skilled chefs boiled them onsite using one of our mobile kitchen trailers so guests could enjoy piping hot crawfish and the lively atmosphere of a true crawfish boil.
